[What the hell!] The famous and merely notable people I've seen in the flesh (in no order whatsoever):

Peter Ustinov - Orly Airport, Paris.
Pierce Brosnan - Opus Restaurant, Hotel Omni (now defunct) Montreal (through the window).
Rob Cohen - writer of Flaming Moe's, The Simpsons, prankish husband of Janeane Garofalo, close highschool friend of mine.
Doug Century - author of a biography of Toni Morrison, highschool friend.
Shari Clough - philosopher, professor, author, friend.
Billy Bob Thornton - cruising chicks in a Montreal shopping mall while still with Angelina Jolie.
Attila Lukacs - artist, elementary school mate, where he was known as Ricky.
R. Murray Schafer - composer, collaborator on a broadcast of his work in Peterborough.
Debbie Harry - Dorval Airport.
Bjork - Dorval Airport, with a major entourage and lots of media.
Grace Jones - Dorval Airport, with major entourage.
Rosanna Arquette - Dorval Airport (she was a real asshole to a cart pusher).
Richard Harris - in Newfoundland while filming Orca (there were spare whale fins strapped to the top of a Chevy van...).
Michael Franti - at a Disposable Heroes concert in Montreal, he was limbering up "backstage" (actually, to the side of the stage, which is why we had a fine view of him getting ready).
Moises Alou - buying a comb at the Pharmaprix (Shoppers' Drugmart) in Montreal.
Pedro Martinez - driving home from a 1994 Expos victory against the Braves with the interior light on. The Pedro-in-jheri curls era.

Politicalish figures: Prince Philip (at Heritage Park), Pierre Trudeau (he lived around the corner from us), Brian Mulroney (particularly on this occasion), Ed Broadbent (pleasantly beaming while walking down the street), Joe Clark (apparently wearing a bowling ball in his shirt and employing a beautiful young woman to help him dress), Jacques Parizeau (surveying his domain), Bob Rae (a rude bugger), Peter Mansbridge (surprisingly charming for a lickspittle) - mostly at Dorval Airport.

J saw Muammar Gaddafi when she was visiting Libya in 1987. She also saw David Hyde Pierce and Kevin Spacey on the Mountain in Montreal.
My folks were alone on a Paris Metro platform with Lauren Bacall.
A close acquaintance had this encounter with a well-known person.
A (former) friend studied under W.H. Auden while at Oxford University.
An ex's brother was Mulroney's Press Secretary.
Best friend, Pierre, saw Muhammad Ali - Dorval Airport, getting into a limo.

And yet I feel as though I'm leaving out some obvious examples... So wait for the update!
